I think I missing an important point here :)

I can understand why Big Bad Sony would want to change the key-combo for accessing some internal feature, that has now become public knowledge.

What I don't understand, however, is why I as a customer or l33t hax0r would want to access a QA interface? Can I perform some magic trick with it?

From the sounds of it, it provided users a restricted method of installing something onto a PS3, and also that whatever is installed will work after an update regardless of what Sony does to restrict pirating on future firmware. I think.
