incompatible versions

my brother and I have both got PSPs, his is japanese and mine is a UK model, both firmware 2.00.

Additionally, his Wipeout Pure is north american and mine is UK, but we can't seem to play in ad-hoc wireless mode. I create a game (or view-versa) and sit waiting for players, and he sits waiting for games to appear and it never does.

The UK game seems slightly different in menus and the like. If I share the demo via game sharing we can play the demo in multiplayer but not the full game.

Do games from different areas not work together in multiplayer?

won't work together.

Multiplayer just works when both have the same version of the game (e.g. both have US)
Same for the downloads. The download and the game must have the same region. You can't use (for example) an US-download with a JAP-game. But (for example) an US-download with an US-game.
